Network structuring and development consultancy

We franchise concepts that work.

You have developed a concept that works. We assess its capacity to be replicated, then structure the know-how, tools and organisation needed to develop it through franchising.

Founded by Patrick Pelonero, co-founder of O'Tacos and founder of Ultimate French Tacos, PELONERO Développement combines experience in creating concepts with hands-on support for the brand, operations and network development.

Why PELONERO Développement

Guided by someone who has done it.

Nearly twenty years as an entrepreneur, the creation of several concepts and more than 150 franchisees personally supported through their development: Patrick Pelonero has lived the decisions, constraints and responsibilities that building a network involves.

This experience informs every engagement: understanding what works in the field, formalising the know-how, assessing the viability of the business model, working on the brand and selecting the entrepreneurs who will carry it.

  • Field experience

Running a venue, organising teams, controlling costs and maintaining quality. Methods must be workable day to day for the people who keep the concept alive.

  • Hands-on franchise development

Passing on know-how, selecting franchisees and organising their support. Developing a network means building a lasting relationship between the franchisor and its entrepreneurs.

  • Brand and marketing at the heart of the model

Positioning, product, identity, customer experience and communication: Patrick and the teams assigned to your project work on their consistency to build recognisable concepts and prepare their development.

  • Committed support, within a clear framework

Our working templates are a starting point. We adapt them to your business, with your data and our assistance. The scope of each engagement is set out in the proposal. Each project is assessed in line with our ethical framework.

Your concept works. You are considering what comes next.

02 / 10

You operate one or more locations, your customers recognise your concept and you are considering developing it with other entrepreneurs.

Before moving forward, you want to know whether your model can be replicated, what needs to be structured and what resources will be required.

Projects without an open location, and models whose economics have yet to be stabilised, require preliminary work.

Entry criteria
  • A location already open and operating.
  • Business data available.
  • Identifiable know-how.
  • A willingness to formalise methods and pass on standards.

Our experience was built in the restaurant sector. We also consider other businesses with identifiable, transferable know-how.

Before franchising, verify what can be replicated.

03 / 10

A profitable location is not automatically a concept ready to become a network. We examine five dimensions.

Starting pointYour concept
Written report
  • Go ahead
  • Go ahead, subject to conditions
  • Consolidate before franchising
01

The offering

Can your promise be delivered every day, by another team, at another location?

02

Operations

Methods, purchasing, organisation, training: is what makes your location work organised well enough to be passed on?

03

The economics

Does the model leave viable room for the franchisee as well as for the franchisor, which must also fund the means to support its franchisees?

04

The brand

Do your customers know why they come to you, and can that difference exist elsewhere?

05

The leader

Are you ready to support entrepreneurs and enforce standards across a network?

01

Diagnostic

When
Your concept works and you are considering developing it. You want to know whether it is ready, what needs to be corrected and in what order to proceed.
What we examine
The business, the organisation, the brand and the economic conditions, across the five dimensions presented above.
Your input
The business data for your location or locations, and your development objective.
What you get

A reasoned recommendation: conditions to be met, points to correct and priorities before development.

Delivered in writing, it concludes with one of these outcomes:

  • Go ahead
  • Go ahead, subject to conditions
  • Consolidate the concept before franchising
Next
You make an informed decision: begin structuring, first meet the conditions identified, or consolidate the concept before returning to it.
02

Structuring

When
The diagnostic concludes that the concept can go ahead, subject to conditions where applicable. The task is then to formalise your know-how, build the way the future network will operate and prepare the tools for its development.
What we deliver

Passing on the know-how

Concept book and operations manual.

So that another team can apply your concept and your standards.

Building the network model

Franchisee and franchisor business models, preparation of the pre-contractual materials and coordination with a specialist lawyer.

To check that the model remains viable for the franchisee as well as for the franchisor, which must also organise the means to support its franchisees, and to prepare legal documents suited to the market concerned.

Preparing the development

Recruitment kit and development plan.

To organise the search for the first franchisees and the stages of development.

The aim: to make your know-how transferable, prepare the operation of the network and give your future franchisees a clear framework to work in.

Your input
You bring your business data and your know-how. We help you gather them, formalise them and build the tools of the future network. Our working templates are the starting point: they are adapted to your business and your data. See the tools that structure the network
What you get
The deliverables selected for your engagement, within the scope set out in the proposal. Legal documents are drafted by the specialist lawyer, for the market concerned.
Next
Once the concept is documented and the network model defined, recruiting the first franchisees can be considered.
03

Development management

When
The concept is structured and you want to develop your network with franchisees whose profile matches your concept and your capacity to support them.
What we deliver
Depending on the engagement selected: sourcing, qualification and selection of candidates, follow-up of discussions and next steps, based on criteria defined for your concept.
Your input
Your involvement in defining the criteria, and your decisions on candidates.
What you get
Management of this process. The actions selected, responsibilities, follow-up arrangements, duration and objectives are set out in the proposal.
Next
Based on qualified applications, you decide which projects to move forward with.

Each engagement is the subject of a proposal setting out its scope, fees and timeline.

Frequently asked questions.

10 / 10
Do you only work with restaurant concepts?

Our experience was built in the restaurant sector. We also consider other businesses with identifiable, transferable know-how. How well your project fits our services and our ethical framework is assessed before any proposal.

Can we start with a single location?

Yes, provided it is open and operating and its business data is available. The diagnostic then shows what needs to be consolidated before considering a network.

Is a profitable location necessarily ready to be franchised?

No. A site's profitability guarantees neither that the model can be replicated elsewhere nor that it leaves viable room for both a franchisee and a franchisor. That is precisely what the diagnostic examines.

What does the diagnostic include?

A review of the business, the organisation, the brand and the economic conditions, across the five dimensions described above, followed by a written recommendation: go ahead, go ahead subject to conditions, or consolidate the concept before franchising.

What happens if the diagnostic recommends waiting?

The recommendation specifies the points to consolidate and in what order. You remain free to work on them at your own pace; the structuring engagement only starts if the conditions are met and the proposal is accepted.

Does submitting my project commit me to an engagement?

No. We first review your needs. No engagement starts without an accepted proposal.

How are fees determined?

The scope, price and timeline of the diagnostic are specified before you commit. The structuring and development management engagements are then the subject of a proposal tailored to the work to be carried out, the maturity of the concept and the level of support required. These fees are separate from the budget needed to develop your network.

Who handles the brand, architecture and communications?

PELONERO Développement leads the development of the network. Patrick Pelonero also draws on the teams at Star Capital, his agency, for brand, architecture, offering development and communications work. Each reference specifies the work carried out.

How do Patrick and the team work with you?

Patrick remains involved throughout the engagement, directly or through the members of PELONERO Développement. Your contacts and the follow-up arrangements are presented in “Your contacts”.

What information do I need to provide to build my network's documents?

The information required depends on the documents to be produced: recipes and technical sheets, purchase prices and suppliers, procedures, team organisation or quality standards. We tell you what to gather and support you in collecting and formatting it. It is then used to adapt our working templates to the way you operate.

Are the documents adapted to our concept?

Yes. They are developed from our working templates, then adapted using the data specific to your business. The documents produced depend on the scope of the engagement.

How are legal matters handled?

We prepare the elements needed for the pre-contractual documentation and coordinate the work with a specialist lawyer, who drafts the legal documents suited to the market concerned.

Tell us about your project.
